Salsa? Yes. Guacamole? Yes. I give you this simple Avocado Salsa, otherwise known as Taco Shop Guac! So simple to make and goes great with so much beyond chips...but chips are the perfect vessel. Add it on top of your eggs in the morning or steak at night. This will quickly become a regular in your recipe repertoire.
Avocado Salsa essentials
Some sort of blender and Taco Shop Guac fixings. Tomatillos, cilantro, limes, kosher salt, garlic, serrano chiles, anaheim chiles, onion, and avocado. That's it!
It couldn't be as simple as putting it in a blender and blending. Well it pretty much is. You could roast the tomatillos if you want but it makes the salsa sweeter and takes more time. Keep it simple, keep it tangy, skip the roasting.
Start by husking the tomatillos and then chop all the ingredients up. Add everything to the blender except for the avocado and cilantro and blend it up.
Once blended, add in the avocado and cilantro and flip it on again. Salt and pepper to taste.
Remember, salt peeks through a lot more on a hot dish than a cold dish. If you're refrigerating your salsa for some dipping later, you might want to add a little more salt. You can always make adjustments. Taste, taste, taste.
Taco Shop Guac goes great with tacos obviously, but also goes great on steak, over the top of some scrambled or yolky eggs, or simply some corn or pita chips.

- 6-8 oz tomatillos husked, rinsed and chopped
- ½ cup packed cilantro leaves
- 2 tablespoons fresh lime juice
- 1 teaspoon kosher salt
- 2 cloves garlic, chopped
- 1 serrano chile, chopped
- 1 Anaheim chili, chopped
- ½ small white onion, chopped
- 1 large or 2 small avocados, pitted and peeled
- Put all the ingredients into the food processor to make into the consistency of salsa.
- Add the avocado last to complete the taco shop guacamole.
