A delicious dinner in just about the time it takes to boil pasta. Garlic and Chili Chef Pasta takes simple ingredients around the kitchen to make an affordable satisfying dinner in minutes. A little chili flake, a little Parmesan cheese, some sliced garlic, flavors you can't go wrong with.
Alright let's talk pasta
First off we're going to get our pot of water boiling and salt the water. Not only is the salt going to season our pasta but we're going to incorporate some of this water later in the dish.
Before adding the dried pasta make sure to get that pot of water up to a boil. Add the pasta in and give it a little mix so it doesn't stick together.
Follow the instructions on your pasta container, we're using a regular spaghetti so it'll take about 7-8 minutes. Its important to keep that water at a boil to maintain consistent cooking times.
Why Chef Pasta?
Why is this a chef's favorite? Because it uses readily available ingredients. After service there's always some parmesan, a little chili flake, a few garlic cloves, and parsley around. Simple ingredients turned into comfort food real fast.
This is one of the times that you'll start off with a relatively cold pan for a sauté. We want the garlic to caramelize very slowly.
Add olive oil to the pan and add sliced garlic and slowly cook it. The olive oil will get to temperature and the garlic will start to caramelize nicely.
Once the garlic starts to caramelize add in the chili flake and a little bit of the parsley. Once nicely coated, add in some of the pasta water to slow the cooking process, we don't want the garlic to burn. Now bring some of the pasta into our sauté pan. Don't worry if some more of the pasta water gets brought in with the pasta. The pasta water is adding starch to the sauce and helps build a thicker consistency.

- 4 tablespoons extra virgin olive oil
- 4 garlic cloves, sliced
- 1 teaspoon red chili flake
- 3 tablespoons parsley, chopped
- ½ cup pasta water
- 4 tablespoons Parmesan Reggiano, grated
- 8 oz dry pasta, spaghetti
- In a cold pan, add olive oil and garlic. Start the temperature at low to slowly caramelize the garlic
- When the garlic is almost caramelized, add half of the parsley.
- Add cooked pasta, begin coating pasta with garlic, chili and parsley. Slowly add pasta water to create a sauce.
- Finish with Parmesan Reggiano and remaining parsley.
